Vacation Roundup: Quick and Easy Dinners

Quick & Easy DinnersI love to cook–it’s relaxing, creative, and satisfying–but I don’t often have time, especially during the week, to make dishes that require a lot of prep work or cooking time. I’ve got a handful of go-to recipes that are quick to make, taste delicious, and are reasonably healthy. I’m always open to others’ suggestions for new dishes to add to my list!


  • For a vegetarian dinner with lots of protein and a hit of spice, I love these Asian noodles with greens. Now that the weather is warming up, you can also serve them chilled for a more refreshing experience.
  • It’s quick, it’s simple, and it’s versatile. Whether you eat it on a sandwich, on crackers, or by the forkful, chicken salad is one of my favorite easy meals.
  • It’s always a good surprise when something that tastes really indulgent turns out to be healthy for you. This baked barley risotto with spinach and butternut squash is just that type of dish. The squash makes the risotto taste creamy, but the only dairy is a little bit of parmesan cheese.
